How to Cook Zucchini in the Oven
One of the easiest ways to cook zucchini is to slice it in an even thickness. The vegetable has a high water content, so it doesn’t take long to cook. Slices should be slightly thicker than their total length. Before putting the sliced zucchini in the oven, make sure they are well seasoned. Using Italian seasoning and garlic powder is a good idea. You can also add lemon zest or juice. Choose medium-sized zucchini for optimal flavor.
To cook zucchini in the oven, trim them if they are too large. For small zucchini, quarter them lengthwise. Large ones should be halved or sliced into thirds. Cut the halved or sliced pieces lengthwise into three wedges. Place each round on a sheet pan with a little oil and sprinkle with parmesan or breadcrumbs. Bake the halved or sliced zucchini for about 12 minutes.
To prepare zucchini for roasting, slice the vegetable in thin slices and coat them with a spiced olive oil. Spread them out on the baking sheet in one layer. Do not overlap the rounds. Once roasted, sprinkle with chopped parsley. If you want your baked zucchini to be tender, you can roast them for about 12 minutes. You can also try adding different herbs and spices, or grated cheese. Just make sure they’re seasoned correctly.
