It’s easier than you think to cook sweet potatoes in the oven. These low-carb, high nutrient potatoes are a versatile addition to any diet. You can use them to make sweet potato casseroles, to top baked potatoes with low-fat cream cheese and sour cream, or to turn an autumn favorite into a winter treat with a delicious caramel sauce. When they’re in season, you can find sweet potatoes in supermarkets as well as health food stores. When shopping for sweet potatoes online, keep in mind that organic ones will have less added sugar and more fiber than the regular variety.
Bring sweet potatoes to room temperature before baking. For optimum results when cooking them, bake at 350 degrees F. If you bake them longer than this, the insides may dry out. Or, use a microwave safe bowl that will retain heat while cooking. In the oven, place about one inch of water in the bottom and add the sweet potatoes, sparingly touching the sides of the pan. Cook, stirring occasionally, until tender and brown, about 3 minutes.
Remove sweet potatoes from the oven and allow to cool to room temperature. If roasting is desired, preheat the oven to the recommended temperature, then place the sweet potatoes on a foil lined cookie sheet. Bake at your desired temperature, for about 25 minutes or until cooked to your desired crispiness. Once cool, peel off the paper covering and slice into wedges. Serve hot.
The classic dessert recipe of oatmeal cookies and butter is also made healthier with sweet potatoes. Substitute the oatmeal for three quarters of a cup of sweet potatoes. In this recipe, you’ll need twice the sweet potato. Cook the potatoes in three quarters of a cup of water until tender. Pureed, they can be used in a smoothie, sprinkled with some nuts or raisins for a treat that’s rich and creamy.
As a substitution, you could also substitute potato chips for chips. You’ll need half a cup of softened cream cheese, grated zucchini, and pitted dates. Combine and bake in the oven, stirring often. Once done, top with shredded nuts and place in freezer. Another easy way to enjoy these healthy chips is in a thermos filled with fruit juice.
As a side note, you can also cook sweet potatoes in the microwave. You’ll need approximately half a cup of sweet potatoes, washed and dried, and two cups of water. Microwave cooking will yield slightly different results, but the end result will be absolutely delicious. Add frozen fruit if preferred, and set the timer to the same time as your oven is. Enjoy the rich flavor and silky texture of these versatile and delicious potatoes!
